According to data from the Chamber of Industry, Commerce of Meat and Derivatives, females account for 43.3% of slaughter, the lower limit consistent with the maintenance of the cattle herd. The figure is, however, 6.8% higher than a year ago due to the increase in the number of cows slaughtered, which was up by 16.4%. Heifer slaughter grew by 1.8%.
In the nine-month period, slaughter was 10 million head, 3.5% more than the same period last year.
Due to the restriction on exporting cow cuts between May and August 2021, the year-on-year comparison shows that cow slaughter grew by 15.1% and heifers decreased by 0.9%. The percentage of females dropped to 45.4% of the total slaughter, cutting the interannual increase to 0.8 percent.
